How to cook a kurik - a traditional Slavic pie?
Some of the recipes of ancient Slavic dishesthey are used to this day, but there are undeservedly forgotten ones, and one of them is a traditional kurik, a special kind of pie, which in the olden days was considered to be a festive dish, and today not all of the owners are not all that can not cook it, but I've never even tried it. How to cook a kurik?
Ingredients:
- Puff pastry (you can take ready, what our grandmothers could not afford) - 600 g;
- Pancakes (cooked according to any of the usual recipes) - pieces 7;
- Chicken fillet - half a kilogram;
- Rice - ½ cup;
- Eggs - 2 pieces;
- Onion green - 2 bunches;
- Butter - 100 g;
- Milk - ½ cup;
- Onions (large) - 1 piece;
- Champignons - 300 g;
- Dill - 1 bunch;
- Pepper and salt to taste.
Preparation:
- Before preparing the kurik, first prepare the filling of three different types (you can at your discretion).
- Rice cook until ready, add butter and chopped finely green onions. Eggs, hard-boiled, grind on a grater, add to rice, stir.
- Boil the chicken fillet, cut into smallcubes. The remaining butter is melted in a frying pan, add milk, a little flour, salt and season with pepper to taste, cook over low heat to the consistency of sour cream, add sliced chicken fillets and stew for 5-10 minutes.
- Fry mushrooms with finely choppedonions to golden color on the warmed vegetable oil, pepper and salt add to taste, also finely chopped dill. The filling is ready, now go directly to how to make a kurik.
- The puff dough is divided into two equal parts,roll out and from one half of the dough, pre-rolled out, cut out the circle, which is laid out layers of the filling, each of the two layers, separating the pancakes. How to cook a cookie you decide - you can lay the filling in three layers, it is possible in six - it is correct in both cases. When the filling is laid out all over, cover the pie with the remaining rolled out layer of dough from above, tightly press it around the edges, and its excess is cut so that the pie turns out in a shape resembling a mound - bulky and round. It is necessary to make sure that air does not get into the dough, it is pressed tightly with his hands. Fasten the edges of the cake and wrap them up. To decorate the kurik, the scraps of the dough are used - they mold various figurines, plaits, put them from above and press them tightly.
- How to cook a kettle in the oven? It is necessary to warm up the oven to a temperature of approximately 200 degrees and bake until a golden crust of beautiful color is formed. Since the pie is stuffed with a completely finished filling, baking does not take much time and corresponds to about 15-18 minutes. To make the cake even more appetizing, the surface of the kurik is smeared with a beaten egg - in this case the crust turns out even more attractive - crispy and golden.
There are many different wayscooking kurik, for which the dough is used not only puff, as in our case considered above, but also sand, and also yeast or fresh. The filling is chosen depending on the season and personal taste preferences, the main thing is that it should be multi-layered, and the layers should be separated by the most ordinary pancakes, otherwise it will not be a kurik, but some other cake.
