It comes from this original snack from Italy and sometimesit is called "Aranchini", which means "orange" in Russian. This name is given to the dish because of its very beautiful appearance, reminiscent of this fruit.

Aranchini is a very hearty dish, so it can be used not only as a snack on a festive table, but also as an independent second course.

Traditionally, the filling for this snack is meat, cheese and tomatoes. But the aranchini with the fish stuffing is very tasty.

Preparation of aranchini with meat and rice.

250 grams of rice (preferably round-grained and such,so that when cooking it becomes sticky) boil in large quantities of water. After all the water has evaporated, the finished rice should be sticky, but not very wet. In a separate bowl, mix two yolks and a half teaspoon of saffron. Cool the rice and combine it with the yolks.

Rub 50 g of Parmesan and mix it with rice. Add also butter of grams 20, so that the rice mass is more plastic and more tender.

While the rice is cooling, it is possible to prepare the filling. Here you can choose according to your taste. Use everything that you like, for example canned tuna, which is simply kneaded with a fork. Add tomatoes, green peas, onions or just vegetables. As already mentioned, meat and cheese with tomatoes are just the perfect filling for a snack on a festive table.

The most fascinating is the formation of aranchini. In one hand, take a lump of rice, on the palm of the hand gently flatten it into a flat cake about a centimeter thick. A tablespoon of filling, a slice of tomato and a slice of cheese (soft), put on a flat cake. Cover all this beauty with rice. Shovel the ball. Rice with cheese and yolks is similar to soft plasticine and therefore it is not difficult to form a rice mass.

The arancini is deep-fried,in raw eggs and breaded (usually breadcrumbs). This gives the arancini a bright golden color and a crispy, appetizing crust. After such treatment, aranchini begin to resemble oranges and such delicious appetizers to the festive table look great.

For those who prefer more useful waysprocessing, deep-frying can be replaced by baking in the oven, but the breading is not used. Preheat the oven and place the aranchini on the baking sheet for 30 minutes.
