Vareniki with a raspberry - a dish for the whole family
Vareniki is a native Ukrainian dish thathas so ancient roots that it is still unknown the exact time of appearance of this delicacy on the table. There are a lot of recipes for their preparation, and every mistress has his own tricks.
The most gentle, soft and lush are obtainedvareniki for a couple. They have not only excellent taste qualities, but also preserve almost all the useful substances that are lost when cooking in boiling water. Steam vareniki are much better absorbed by the body. Their filling can be varied. Depending on their own taste preferences for their preparation can be used both sweet and meat or vegetable components: the curd, apples, potatoes or fungi, liver and minced meat, and a variety of fruit (strawberries, blackberries, raspberries). Fruit fillings are rich in vitamins and trace elements, and meat fillings are a valuable source of proteins, amino acids, phosphorus, iron and potassium.
If you want to pamper yourself and your family members with something delicious in the summer, prepare vareniki with raspberries. Of course, it will take a lot of time, but believe me: the result is worth it.
To prepare delicious vareniki for a couple, you will need:
- kefir (whey) - 0, 5 liters;
- flour - about 1 kg (as much as "take the dough");
- soda - 1 teaspoonful. a spoon;
- eggs - 2 pcs. (not necessary);
- salt - half teaspoon;
- Sunflower oil - 1 table. a spoon;
- raspberry - 400 g.
From the above ingredients, cookA flexible elastic dough that should not stick to your hands. For this, sift the flour and sprinkle it with a slide. Make a hollow and place the eggs in it. Mix the ingredients with the selected fermented milk product (whey or kefir) and salt. More magnificent vareniki are obtained if you previously separate the yolk from the protein, whip them and then add to the flour. Kefir or whey can be replaced with ordinary water, but in this case the dough will turn out to be more taut and less elastic.
Knead and roll the dough. So that it does not stick to the rolling pin, periodically sprinkle it with flour. If you have time, you can give the test to lie down in the cold for about half an hour.
Useful advice: to get the desired result, use only high quality flour.
Cut a cup or glass into small circles,and in the middle lay in a couple of teaspoons of raspberries, sprinkled with sugar. Instead of raspberries, you can use any other berries: plums, cherries, apricots, blueberries or strawberries.
Clamp the edges of the resulting products with a braid andcook them for a couple. For this, take a small pot and fill it with water by about ¾. Cover it with a layer of gauze. To keep it, wrap the edge of the pot with a strong thread. Put a container of water on the fire and bring the water to a boil. Now you can lay out vareniki. Between them, you need to leave a small gap, because during cooking vareniki will increase in volume. Cover the top of the product with a deep bowl, equal in diameter to the pan. Before each housewife the question arises: how many boil vareniki? As a rule, 5-10 minutes is enough to make vareniki for a couple turned out simultaneously lush and juicy. According to this recipe, you can cook vareniki in a double boiler.
Put the dumplings in a bowl,previously greased with margarine or butter so that they do not stick together. You can pour products with fruit syrup, fresh honey or sprinkle with sugar. Very tasty dumplings with steam with raspberries are obtained with sour cream or melted butter
Finished products can be frozen. Just get them before cooking from the freezer, defrost and heat. Without changing the taste of vareniki can lie in the freezer for a month or more. Bon Appetit!
