Recipe for originals: squash cake
Zucchini is an American pumpkin companion. Having come to Europe together with the ships of conquistadors returning from Mexico, this vegetable did not immediately become popular. But already from the XVII century, these cucumber-like overseas guests begin to appear on the tables first with the nobility, then with the common people. Attitude to zucchini in people is different: someone can not live without them, but someone can not tolerate their sweetish smell and taste. Therefore, the hostesses learned how to cook this vegetable in such a way as to please all members of the family. Below is a recipe for a dish that will gladly eat (and will necessarily ask for supplements), even the person who does not tolerate zucchini in spirit. And he does not even guess what this food is made of. So, the squash cake.
It can be sweet, with lemon-creamysauce, and from zucchini you can even make cakes! But now we will consider how a normal vegetable pie is made, which can be served as a snack or as an independent dish. We will have to make cakes, for this purpose should stock up a good frying pan of a small diameter. To bake a cake of zucchini, you need a few small or two large vegetables, so that the total mass is 900 grams - 1 kilogram. Wash them and clean them. Do not discard the skin - it will be useful to us in the last stage of cooking. If the fruits are ripe, remove the seeds. Rub vegetables on a small grater or crush in a blender. Allow to stand for half an hour and drain off the liquid.
In the resulting puree, drive two eggs and adda little wheat flour. We pour it on the eye, but passing through a sieve to avoid lumps. A squash cake will turn out to be gentle if its dough for consistency will resemble thick sour cream. Now left to pour two tablespoons of any vegetable oil, salt to taste and bake. Reheat the frying pan with vegetable oil and try to bake the first test pancake. If it does not turn well, adhere to the bottom, add a little flour to the dough.
When all the pancakes - and they should go 5-6 pieces -bake, cook "cream": in 3 tablespoons of mayonnaise squeeze 1-2 cloves of garlic, stir actively. This mass is smeared with our squash cake. Now it should be decorated with "roses". For this, cut 2-3 tomatoes with neat circles and fry them to a crimson color or bake in the oven. As we remember, we still had skin. Cut it in the form of thick noodles and boil in a little salted water about 6-7 minutes after the start of the boil.
When the vegetable peel is cooked, pull it out andwe lay out on the board to keep the shape. When this "noodles" cool down, decorate it crosswise with a squash of pie, along the perimeter adding circles of tomatoes. Can be different
To make a squash cake with curdstuffing, you need to bake the cakes, as in the previous recipe. You can add a little spice to the dough - black pepper, zira, cumin and turmeric. But for the cream it is suggested to take 300 g of good cottage cheese, one Bulgarian pepper, a dozen olives without pits, pickled cucumber and 2-3 cloves of garlic. Vegetables and a sprig of basil is finely chopped, mixed with cottage cheese and whisk a little bit. Slightly let stand in the cold and serve to the table!
