How to do everything right? There are several basic variants in the nature of preparation of the cured sunflower, which we will describe. Vyalat bull-calves of various sizes, entirely, but when the fish is large, it is better to gut it. For smaller, this is not necessary, especially if you cook it in the open air.
- First, the material should be thoroughly cleaned of mucus and sand.
- Then we weigh our "blanks" to properly calculate: how much salt to take for pickling (the usual proportion: 1 kg of salt per three kilos of fish).
- Salt the bull-calves in a suitable container(enameled, glass, wooden, plastic). At the bottom, fill a small amount of salt, put the fish, and top up with salt. Fish thoroughly mix, so that any goby was optimally covered with salt - so the vessel is better to take larger sizes. Next - we set aside, covering with gauze, about a day.
- Through this time, the calves are soaked (in time -a couple of hours - quite). To do this, fill them with water in the dish, where they are salt. Several times we change the water, and the fish while stirring - otherwise the product is too salty.
- After soaking each fish lower on the nylon thread through the eyes (the bulls strung through the gills, sometimes spoil). Low hang out for drying.
Where to dry
"Bring to mind" steers jerky in the shade, in the wellventilated room. And it is better, if the weather permits, then on the street. We hang out a garland, so that the fish do not touch each other. From flies we protect with gauze cloth. With such a hanging, and in case of an unsuitable weather, as a rule, two or three days is enough. Well, or more you can, if you like very dry. In brine (brine)
Another way to make a steak cured - inbrine. This word means a steep solution of salt in water. Here we will salt the gobies, and then we'll let them go to a state that will suit you individually.
Cooking solution is easy. Pour about 4-5 large spoons of salt per liter of water, thoroughly stirring until it is completely dissolved. Then we put a fresh egg in the brine - it will stay on the surface. Add a little salt, stirring (you need to ensure that the visible part of the egg was the size of a 5-penny coin). Once this happened, stop adding salt, take the egg, and bring the brine to a boil, and then cool it. We fill the fish with a cold solution.
Before this procedure it is necessary to prepare: carefully rinse, and if large - and then gut. The brine in the tank should cover the bulls completely. Leave to salivate for about a day (place - cool, dishes - cover). After the due time we take the bulls from the brine and hang them by the method "through the eye" to the threads of kapron or skewers in a shady place for several days. And if you like (for example, beer) more dried, then leave the fish hung hanging until it reaches the required dryness. And do not forget about flies!
