According to some historians,yeast pancakes first appeared in Russia at the beginning of the second millennium. A round pancake symbolized the sun even before the baptism of Rus. Since that time pancakes are not accepted to be cut with a knife, they are eaten by hands, folded, torn, but not cut. Recipes of pancakes exist in the kitchens of different nations of the world - but in Russian cuisine there are more than a hundred recipes for pancakes. Each family had its own, a family recipe for pancakes, it was passed on to each new generation. Pancakes were served with fish, mushrooms, caviar, sour cream, jam or honey, as a dessert and meat dishes. There were very popular pancakes with different bakes. They were yeast, and without yeast, from different types of flour, milk, whey and even water. Pancakes on sour cream were very common, a recipe somewhat forgotten in our time.
Pancakes on sour cream, recipe. To prepare pancakes on sour cream you need thick sour cream (300 g), 1.5 cups of flour, 3 large eggs, two tablespoons of sugar, half a glass of milk, salt, 100 g of butter. First, beat eggs with salt, sour cream and sugar whisk or mixer. Then add flour and butter, knead a homogeneous, without lumps, dough. If it is too thick, dilute with milk or water. At 200 g of sour cream (20-25%) we take:
· 2 eggs
· Half a cup of vegetable oil
· a glass of flour
· 3 table spoons of sugar
· 0.5 teaspoons of soda and the same amount of baking powder
· A pinch of salt and margarine
Thoroughly mix all foods, except margarine,in a homogeneous dough, so that no lumps. In a very hot frying pan, melt the margarine, pour a dough into it, pancakes should be 12-15 cm in diameter. Fry from two sides, if necessary, add margarine.
Pancakes on sour cream from two types of flour.
For these pancakes you need two kinds of flour.
We take:
· 3 cups of buckwheat flour
· 3.75 tbsp. wheat flour
· 0.7L of warmed milk
· One glass of sour cream
· 40g yeast
· About six eggs
· Salt - 2 teaspoons
Another pancake from sour cream, this recipe will bemore complicated than the previous two. 4 hours before frying pancakes, dilute buckwheat flour with a small amount of boiling water and knead until smooth. Add the yeast - they need to be diluted in a quarter of a glass of milk. Then add the rest of the milk, knead the spoon and let it rise. For one hour before baking add yolks, sour cream, salt, wheat flour to the dough. Stir, add the whipped whites there, mix again gently, and when the dough rises again - you can bake pancakes.
Pancakes on sour cream, recipe on water.
For 6 servings of pancakes you will need:
· Two cups of water
· Two cups of flour
· Egg - two pieces
· One table spoon of powdered sugar
· One pinch of salt
· Six tablespoons of sour cream
· One tablespoon of vegetable oil
Eggs beat in a foam whisk or a mixer,adding to them sugar powder, salt, a third of sour cream, and mix thoroughly. The flour must be sieved through a sieve. In the whipped egg mass pour in water, gradually add, stirring, flour and butter. Homogenous mass through a large sieve and bake thin pancakes of golden color. Serve with the remaining sour cream and stuffing from the cheese curd (mix cottage cheese with crushed garlic and chopped greens).

· 650g of wheat flour

Whisk egg yolks with sour cream and salt in a thickfoam. Then gradually add flour, sifting through a sieve. Beat the proteins in the foam and add to the dough. · Half a liter of milk
· Four small eggs
· Two table spoons of sugar
Salt pinch
· Three tablespoons of sour cream
· Six (with a slide) of a spoonful of flour
· Two tablespoons of vegetable oil
Separate the yolks from the whites, beat the yolks with sugar. Add milk, sour cream, whisk with a mixer, reducing the speed to a minimum.
Gradually add flour. Separately whip the whites with salt into the foam. Also gradually add the proteins to the dough, gently kneading them into the dough with a whisk. We pour last vegetable oil. We knead the dough to homogeneity. Fry pancakes in a hot frying pan, greased with bacon or any oil.
