Rassolnik is a favorite dish in many families. It perfectly combines seemingly incongruous products: cereals, pickled cucumbers and meat. And pea soup enjoys no less popularity - tasty and satisfying, it perfectly warms and restores the tired after work or study of family members.

Delicious rassolnik, recipe:

Ingredients: a piece of beef tenderloin weighing 400 grams, potatoes 8-10 pcs, half a glass of pearl barley, salted or pickled cucumbers in brine - 200 g, a bulb and 1 carrot. First, you need to boil the meat - for this, it is washed and cut into small cubes. Beef is thrown into boiling water and boiled for about 10 minutes. Next, a washed barley is added to it, salted and left to simmer for a half an hour. At this time, the potatoes are cleaned and cut into cubes, carrot tinder on a fine grater, the onions are ground and together with the carrots are fried separately in a pan. When the groats are boiled, potatoes are put in water, and after 5 minutes cucumbers and roast. A glass of cucumber brine is added to the broth. When the potatoes become soft, the rassolnik is ready. Before serving, you can sprinkle with fresh herbs, and add a spoonful of sour cream to each plate.

People who observe fasting or simply do not eatmeat, can prepare rassolnik with mushrooms. The recipe of cooking is no different from meat, just instead of tenderloin or chicken fillet put mushrooms. Accordingly, the first barley is cooked.

Perhaps not everyone knows that the pearl barley is not the only cereal with which the pickler is prepared.

The recipe for cooking a delicious soup with rice:

For cooking you will need: half a kilo of chicken meat, 2 onions, 4 pcs. potatoes, 2 carrots, 4 pickled cucumbers, pepper and cloves. Cucumbers cut into small cubes, carrots are cleaned and divided into 6-8 parts. Onion finely chopped, and carrots tinder on a large grater, add cucumbers and fry in butter. Cook the chicken for an hour, adding to the broth diced carrots, a whole peeled onion, clove and bell pepper. Meat is taken out and divided into pieces, and then returned to the broth. Put the washed rice into it, after five minutes - diced potatoes. After another 10 minutes, add the cucumber and roast in the soup. Cook until the potatoes are ready, sprinkle with chopped parsley and pepper. Serve with sour cream.

Rassolnik, cooking recipe with veal:

For soup you will need: half a kilo of veal, 2 cups of cucumber pickle and 3 cucumbers, carrots, onions, half a glass of pearl barley, 2-3 pcs. potatoes, greens. Pearl barrels are soaked in warm water for 1-2 hours. While it swells, a piece of veal is cooked in salted water. Then it is removed, cut into small cubes and again returned to the broth. Carrots are grinded on a large grater, the onions are finely chopped and fried in vegetable oil in a frying pan. When the meat is ready, a soaked barley is transferred to the broth. Potatoes, diced, put for barley, after 20 minutes. Ten minutes before the readiness to the soup, add diced cucumbers, fried and pre-boiled brine. Sprinkle with fresh herbs of parsley and dill, served with sour cream.

Pea soup is not less delicious than rassolnik. Recipe:

A glass of peas is soaked in advance - for severalhours or even left overnight. A piece of meat 400 g (can be brewed) is boiled for an hour, then it is removed, cooled slightly, the flesh is cut into small cubes or cubes and put back into the soup. Prepare a roast from finely chopped onions and rubbed carrots. When the meat is ready, peas are added to the broth, cook for about half an hour, add roast and black pepper peas. Give paw for 5 minutes, and then turn off the pea soup.
